Explained the history of how this myth in diet and health evolved.

Her writing style makes this revealing book about the hazards of industrial oils (corn, rape, cottonseed etc) and the nutrition natural fats (butter, cheese, coconut oil, cold-pressed oils) can give us. Since the power-that-be have convinced the public that fat is bad (unless it is an industrial oil) and causes numerous life-threatening conditions, she documents and details the bad science and alternate agendas that 'support' their views. She also documents scientific papers that support natural fats and/or point out the hazards of industrial oils: these are quickly denied or buried by the powers-that-be, who are protecting their position.
Fats function is explained: In our cells and cell walls, in cholesterol (is vital for nutrient transport), etc. How industrial oils that are Hydrogenated, Esterized or Trans-fatted to make prepared food shelf-stable with a good mouth-free and these undermine our health.
Bottom line: natural fat is good and full of nutrients. Natural fats work with our body to make it work well. Fake fats (Industrial oils) are processed and contaminated (in an attempt to make them 'clean and appetizing' to utilize agricultural waste (eg cottonseed oil from cotton ginning). Excellent book--great recipes. Let's eat like our Great-Grandparents and let our body work the way it was designed and regain health!
